Remove The Tassel And Inner Husk

Once the outer leaves are gone, you should be able to remove the rest of the husk more easily. The best way to do this in one fell swoop is to grasp the tassel along with the tip of one piece of husk and tug down firmly, removing a portion of the silk and husk at the same time. Directions:Heat Grill to med-hi. Trim the tops of the corn leaving the top end of the ear exposed. Peel back the husk of each ear, keeping it attached at the stem and remove the silk from the cob. Once completely clean of silk, cover the corn back up with the husk. Place the ears into a large pot of cold water for 10 minutes. Remove corn and shake off any water. Place the corn directly on the grill grates and close the cover. Grill 20 minutes turning the cobs every 5 minutes. To easily remove the excess silk strands from fresh corn, wrap a large rubber band around your fingers. Then rub it against the corn kernels. The silk gets trapped in the rubber band, leaving behind a clean ear of corn.

To remove the silk from fresh sweet corn, simply dampen a sturdy paper towel with water. Draw the moist paper towel down the length of the corn and the silks will cling to the paper.

How To Boil Corn On The Cob

Ingredients

  • One quart of water per ear of corn

Step 1: Prep the corn

Remove the husks and silk. Cut out any blemishes with a sharp knife.

Step 2: Place corn in boiling water

Once your pot of water is boiling, add the cobs. Cover the pan and let the water return to a boil.

Pro tip: Never boil your corn in salted water! It can make the kernels very tough.

Step 3: Boil for 3-5 minutes

Boil the corn until tender, 3-5 minutes. Remember, the cooking time will depend on the variety and maturity of your corn.

Step 4: Enjoy!

Turn off the heat and carefully remove the cobs with tongs. You can keep the remaining corn warm in the water for another 10 minutes without it becoming too tough. Or, place the corn on a platter and cover it with a dish towel. This keeps most of the heat in.

Place The Corn In Jars

When canning it is important to use the proper equipment. You can use Mason jars or old mayonnaise jars to store the food in either pint or quart sizes.

Be sure to wash and sanitize these jars before you can corn.

You can achieve proper washing and sanitizing by either placing the jars in the dishwasher on the sanitizing option or washing them by hand and then placing the jars in boiling water.

It is important to boil your lids and rings for two minutes even if you use the sanitizing option of your dishwasher.

Once the jars are clean place one teaspoon of canning salt per quart in the bottom of the jar.

Then you will start packing the jars as tightly as possible with the corn. There is no way around making a mess when packing corn into canning jars. After you pack the jars up to the neck, fill them with boiling water up to the neck as well.

Be sure to use a ladle and a funnel when pouring the water into the jars.

After the jars are filled, place a clean lid into a clean ring and place them on the jars. Close them tightly.

Two years ago, I made a triple batch of roasted corn salsa . It is my husbands favorite preserve and I like it a whole heck of a lot as well. We eat it with rice and black bean bowls in the winter, and over chicken fajita salads once the weather starts to warm. Its also a nice topper for homemade nachos .

As much as I enjoy eating this salsa, Ive never enjoyed the process of making it. Thats all changed now that Ive discovered the secret to easily shuck the corn and remove most of the corn silk. I now roast the corn at 400 degrees F in its husk for about seven minutes in a hot oven before attempting to shuck it. Once the time in the oven is up, I pull the corn out and let it cool for ten minutes or so.

Once it is cool enough to handle, the husk comes off cleanly and leaves only a strand or two of corn silk behind . This little trick has transformed a job I dread into one where I can clean two dozen ears of corn in just a few minutes without feeling in any way irritated by the task.

I do have a word of warning about this trick. Corn husks are flammable. Make sure to keep the husks and silk well away from the flame or heating element. I like to stack the ears on a rimmed cookie sheet so that I can move them quickly if something starts to singe. I also take care not to stray far from the kitchen when Im roasting corn like this so that I can keep a close eye on the happenings.

OMAFRA field crop staff in collaboration with the Grain Farmers of Ontario and members of the Ontario Agri-Business Association have completed the annual Provincial corn ear mould and mycotoxin survey. Corn ear moulds such as Gibberella and their corresponding mycotoxins occur every year in Ontario. These mycotoxins, particularly vomitoxin produced primarily by Gibberella/Fusarium ear moulds can be disruptive when fed to livestock, especially hogs. The 2018 survey found 60% of samples tested low for DON. As we have seen in previous years when environmental conditions were favourable for disease development, the Ontario grain industry has been prepared and able to process corn with minimal impact.
